Easy Garbanzo Bean and Veggie Stew


Time: Less than 15 minutes

Servings: 3 Main Dish Servings; 5 Side Dish Servings

Serving Size: 1 ¾ cups main dish serving or 1 cup side dish serving


Ingredients:

10 oz package Frozen Petite Green Beans

1 Tablespoon Olive Oil

14.5 oz can Diced Tomatoes No Salt Added, undrained

15 oz can Garbanzo Beans No Salt Added, drained


Directions:

Steam frozen green beans on stove top in covered saucepan until heated through approximately 5 minutes (You can also steam the green beans in microwave).Meanwhile in another saucepan, heat 1 Tbsp olive oil on medium heat, then add diced tomatoes and garbanzo beans and cook until mixture reaches a simmer.Add cooked green beans to tomato/garbanzo bean mixture, turn heat down to low and simmer covered approximately 5 minutes.Season with a couple turns of your salt and pepper grinder and serve.
