Crockpot Vegetable Gumbo

Crockpot Vegetable Gumbo

(makes 9 cups)

This is a great basic vegetable gumbo. You can serve it with rice and add either chicken, sausage, shrimp or all three.

2 12 oz bags frozen gumbo vegetables

¼ cup flour

4 cups low sodium vegetable or chicken broth

2 28 oz cans diced tomatoes

1 teaspoon thyme

1 teaspoon Old Bay Seasoning

1 teaspoon garlic powder

Place the frozen vegetable mix in a sautee pan and heat them while stirring occasionally until the okra releases its thickener. Next sprinkle the flour over the vegetables and stir until thick. Add 2 cups of broth to the vegetable mixture and stir to combine. Put the vegetables and everything else in the crockpot and cook on low for 8 hours or high for 4 hours.
